I intended to write a post on Mother’s Day thanking all the hard working Moms out there who are busy working, keeping the house and taking care of their family but, I was too busy. It had been a particularly stressful couple of weeks at work and I finally had a break, and I didn’t feel like doing anything. I still managed to cook lunch for my Mom. We grilled chicken and burgers and I made my Aunt Mandy’s Bean Salad. This delicious salad is perfect for a sunny day. It’s cool and refreshing because it’s flavored with a dressing made from cilantro and limes.
I try to do everything, and mentally beat myself up when I miss something or mess up some recipe. For example, I attempted to make a French Toast Casserole for brunch. I cut up a loaf of French bread and made a batter of eggs, brown sugar, milk and cinnamon. I thought that it would be a good idea to add some cream cheese as a filling, then I soaked the bread in the egg mixture for several hours before baking. The girls were trying to be nice about it, but I could tell neither of them liked it. I’m going to keep trying. I’m learning that it will all get done, maybe not right away, but when the time is right. Don’t stress the small things.
