Apple Pie

Apple Pie has always been my favorite pie. We had bunch of apples, so I thought it would be a good idea to teach the kids how to bake a pie. Everybody had a job to do, one person peeled the apples, another one helped me with the crust and we all enjoyed eating it together. The only thing that would have made it better would be some ice cream on top.

Ingredients

Crust:

2 ½ cups Flour

¼ teaspoon Salt

1 cup Cold Unsalted Butter cut in cubes

½ cup Cold Water

Filling:

6 Granny Smith Apples, peeled and sliced

2 tbsp Lemon Juice

1 cup Sugar

½ teaspoon Cinnamon

Step 1

Preheat the oven to 350 degrees.  Put flour and salt in a food processor and pulse for a few seconds till mixed.  Then add the butter and pulse till the dough forms little balls about the size of peas.  Then gradually add the water, till it looks gooey.  Remove from the food processor, divide the dough into 2 and roll into flat balls.  Then wrap each flat ball in plastic wrap and refrigerate for an hour.

Step 2

Put the Apples in a bowl and toss with lemon juice, sugar and cinnamon.

Step 3

Roll the first dough out flat, large enough to fit in your baking dish with a ½ inch overhang.  Sprinkle a little flour on your rolling pin and on your work surface to prevent it from sticking.  Place the first dough in your baking dish.  Fill the pan with apple mixture.  Roll out the second dough out flat, large enough to cover the top of your baking dish, they put on top of the apples.  Trim the top dough so that you have an inch overhang.  Pinch the top and bottom dough together then crimp with your index finger and thumb to create a scalloped edge.

Bake for 50 minutes.
