This delicious dish originates from Rome, it’s easy to prepare and my family loves it. It’s my go to dish when I’m running short on time. It’s prepared with ingredients that we usually have on hand. I hope you enjoy.
Ingredients
4 Slices of Bacon
1 tbsp Olive OIl
16 oz Spaghetti
3 eggs
1 cup Parmesan Cheese
¼ cup Green Onions chopped
¼ tsp Salt
4 Cloves of Garlic

Step 1
Cook pasta in lightly salted boiling water till it is al dente as per instructions. Reserve 2 cups of pasta water for later.
Chop the bacon into ¼ inch pieces. Put Olive Oil in a large pan and fry bacon till crispy. Remove bacon and put on a plate lined with a paper towel. Add garlic to the pan and saute for 1 minute.

Step 2
In a medium bowl, create the sauce. Beat 3 eggs and stir in Parmesan Cheese.

Step 3
Drain pasta, (remember to reserve 2 cups of pasta water for later). Add 1 cup of reserved pasta water to the egg mixture and stir. We don’t want to cook the egg, we just want to temper it.

Step 4
Add the hot pasta and bacon to the large pan, then pour in the sauce and mix immediately. We want the eggs in the sauce to thicken in the hot pasta and bacon. If the dish is too thick, use the reserved pasta water to thin it out.
Top with green onions and season with salt and pepper.
